Air Fryers & Deep Fryers

Buy and sell air fryers and deep fryers in Guatemala.

A chile relleno dipped in beaten egg settles the argument. An air fryer crisps fries, chicken pieces and tostadas with a brush of oil, but egg batter drips straight through its basket, so anything in egg batter still goes into hot oil. Both kinds of machine change hands here, new and second-hand: single-basket and two-drawer air fryers from Ninja, Oster and Black+Decker, home electric fryers with a lid and a filter, and now and then a gas fryer from a restaurant kitchen.

Chiles rellenos and the limits of an air fryer:

it is a small convection oven, a fan blowing over a heating element, and it does well with anything that already carries some fat or only needs a light coat of oil: frozen fries, chicken, tortillas turned into tostadas. What it cannot do is set a wet batter. Chiles rellenos, green beans bundled in batter and anything else dipped in whipped egg have to land in hot oil so the coating seals at once, and plantain fritters stuffed with sweet black beans come out of an air fryer drier and paler than out of the pan. Households that make those on a Sunday end up keeping both.

One drawer, two drawers or a tank of oil:

the single-basket air fryer is the common one and suits a couple or a small family, because food has to sit in one layer to crisp. Two-drawer models from Ninja or Oster run two separate zones, so the chicken and the fries finish together at different temperatures. Oven-style air fryers with a glass door and racks crisp less evenly but also bake and toast, which puts them close to the toaster ovens. For beans or rice, the cookers do the job better. An electric oil fryer has a tank, a lift-out basket, a thermostat and a lid with a filter that holds back most of the smell. It earns its place with batter and big batches, not one portion on a weeknight. Gas fryers, with one or two tanks, are restaurant equipment and are judged on burners and welds.

Two-drawer air fryers against a home oil fryer:

a two-drawer Ninja runs about Q1,200 to Q1,500 new, more than twice the price of a home electric oil fryer with a lid and filter, which sits a little under Q600. That premium buys convenience rather than capacity, so a used two-drawer machine is where a buyer saves the most, and its price should follow the drawers that still heat. If one zone has died, what is left is a single-basket fryer in a bulky case, and it should be priced like one. A used oil fryer starts low, and the tank tells you what it is worth: one still slick with old oil shows how it was looked after.

An air fryer that blows air but never gets hot:

has a burnt element or a blown thermal fuse, and the fuse does not reset, it has to be replaced. Run any used one empty on high and hold a hand near the vent. Pull the drawer out and push it back: the fan should stop the moment the drawer leaves and start again when it seats, and a drawer that has to be held in place has a worn latch or switch. On a two-drawer model, test each side alone and then both together. Check the crisper plate and drawer floor for peeling coating. On an oil fryer, watch the ready light come on and later cycle off, check that the element sits straight and that the lid filter is not gummed solid. On a gas fryer, light the pilot, see that it stays lit, and look for weeping along the tank seams.

Selling a fryer that smelled of last Sunday’s pork crackling:

drain it, strain or throw out the oil and degrease the tank, basket and lid, because the smell reaches the buyer before the machine does. For an air fryer, photograph the inside of each drawer and the crisper plates in daylight, give the brand and the capacity marked on the base, say whether the plates are the originals and mention any rattle from the fan. Someone coming down from Cobán or over from Chimaltenango will want to see both drawers heat, or a gas fryer hold its pilot, before paying, so agree a time when it can be run, and keep the box: a two-drawer machine is awkward to carry home without it.
